I have a desert recipe that everyone loves. The problem is it has to stay cool. What you do it is take Angel food cake and cut it into small almost bite size squares. Then you mix together cool whip and instant vanilla pudding (smaller size box) You add that to the cake then add a small can of crushed pineapple (drained), cut up strawberries (as much as you want) and a bananna or two. Mix it all together. The great thing it is easy and you just throw everything together. If you want to make it more portable, put it in the smaller disposable containers and use plastic ware and toss when you are done. It doesn't keep very well anyways. It gets really soggy. Just thought i would pass along my favorite picknic recipe!

Another wonderful make-and-take is:

French-Country Potato Salad(I am giving this recipe from memory so there are few measurements.

mini white and red potatoes - about 25 of them
dijon mustard
mayo
fresh basil
cooked and coarsely chopped bacon (a full pound)
chives
paprika


roast the mini white and red potatoes (be sure to leave them a wee bit firm) - i like to do this on the BBQ but the oven works well too

once roasted(but not mushy), cut them all in quarters and place in a nice bowl (but if you are taking it somewhere a big tupperware with a lid is great), add the chopped bacon and chives

in a mixing bowl mix up 2/3 mayo and 1/3 dijon - enough that you think you can cover all the potatoes

gently mix in the dressing - if you haven't made enough you can always make a wee bit more

sprinkle with paprika

DONE.

YUM!


This is my FI's favourite - it really isn't healthy, but it is damn good - men are generally all over it - i mean, really.... potatoes and baconhuh.gif

yummy potato salad! It's similar to German potato salad with the bacon, it gives a great flavor. In Holland where my dad comes from they make it with diced green apples and ham - it's really tasty.

 

Potato salad in general is great, you can do so many things with it. Our "basic" potato salad is potato, mayo, mustard, celery, garlic powder, celery salt, black pepper, onion, and egg. But the fancier the better. Sometimes I make a good one with capers and olive oil in place of mayo...I bet we all have variations on potato salad!

If you are worried about heat, do a vinegar based salad dressing.

 

I love the Cucumber, Onion and Tomato salad. Or a Caprese Salad with fresh mozzerella, basil, and capri tomatoes.

 

I also make a really good greenbean salad with the long french snap beans, sauteed shallots and garlic with julienne colored bell peppers in a champagne dressing.

Oh, and as a sandwich alternative, you could do a tortilla or lavash wrap. They hold up longer than simply meat on bread.

 

You make a flavored cream cheese, spread it on first, add tomates and lettuce, then meats. Roll them up, put them in the fridge to chill and set up then slice them into big pinwheels!
