Tailgate menu ideas?

Hey everybody. Jay and I are going to Old Timers Day at Yankee Stadium on Saturday. We wil probally tailgate beforehand. I'd like to do something a little bit more special/ inventive then sandwiches and chips. Ideally, I need a menu that travels well and can be eaten while sitting in folding chairs on top of a parking garage. Any ideas are appreciated!!! Thanks ladies!

Sounds like a fun outing! If we aren't cooking usually we'll go to a local deli we love and get pints of our favorite things. Also fried chicken travels well if you're feeling a little greasy, or grilled chicken with beans, rice, & tortillas.

 

You can make chicken salad in pitas or lettuce cups, just grill/cook some chicken & cut it, & mix it with what you like. We love curry chicken salad with chopped cashews & grapes...okay I'm getting hungry!

 

Do they sell jicama where you live? A good and easy salad is jicama, mango, and cucumber with some lime, chili, and red onion.

 

We picnic a lot and I love making these sandwiches, if you end up going the sandwich route try them they are yummy! (recipe from Dean & Deluca)

 

Goat Cheese, Avocado, and Turkey Sandwich on Nut Bread

An ideal picnic sandwich, especially when a crisp, cool bottle of Sancerre or Pouilly-Fumé is at hand.

 

 

Ingredients:

3/4 pound tomatoes, finely minced (about 1 cup)

1 tablespoon finely minced scallion

2 heaping tablespoons finely minced cilantro

salt and freshly ground pepper to taste

12 slices nut bread, each about 1/3 inch thick, 3 inches wide, 6 inches long (this is easiest to achieve if you cut the bread from a round loaf)

12 ounces goat cheese

12 thin slices of smoked turkey breast (about 1/2 pound)

2 medium avocados, peeled, pitted, and cut into thin slices

 

 

Directions:

1. Mix together the tomatoes, scallion, and the cilantro. Season to taste with salt and pepper.

2. Spread each of the 12 bread slices with 1 ounce of goat cheese. Top 6 of the slices with a slice of smoked turkey. Top each turkey slice with one sixth of the tomato mixture, spreading evenly. Top that with a thin layer of avocado slices, seasoned with salt and pepper. Top with the remaining slices of turkey, and cover with the remaining 6 slices of bread (which have been spread with goat cheese). Cut each sandwich in half.

 

 

Don't fret over slicing the bread exactly in this great sandwich recipe—or even the exact proportions of ingredients. What follows is a guideline. But any combination of these ingredients on any slice of nut bread is going to yield a great sandwich. Makes 6 sandwiches

What about a nice steak salad? Barbeque a steak the night before (med rare works great), then day of slice it thin and toss it with simple field greens, and some chopped tomato. When you get to the park, add a bit of balsamic vinagrette.

 

And a good dessert always makes things special - a cheesecake with fresh strawberries or some apple pie, maybe?

 

At the stadium, they don't care what you're drinking as long as it's not in the original container. Champagne in plastic party cups would also make things nice!
