Mashed Potatoes ... any yummy twists?

i LOVE making mashed potatoes like smashed baked potatoes with all the yummy toppings, kinda chunky-like. cheese, sour cream, REAL crumbled bacon, butter, all the good yummy stuff everyone mentioned and leave the skins on! so good. oooohhhh.

Loaded Potatoes:

Butter, Cheddar, Chives, and Bacon

 

Sweet Potatoes: Pecans, Brown Sugar, Mini Marshmallows. Put the marshmallows on top and brown just before serving.

 

Irish Colcannon: Blanched Kale (lots of iron!) salt and pepper maybe some parsley

 

Sauteed Leeks and fresh garlic maybe some asiago cheese

 

White Cheddar and Roasted Red Peppers or Green Chilies

 

I could go on for days! LOL

it is SO good - it is a throw back to my childhood - my mom always made this.

so, this is the 'real' stuff

but i don't like to buy that b/c it has some added shit so i just buy corn flakes or whole grain corn flake cereal and put it in the food processor. then you put the crumbs in a ziploc bag. add in a touch of salt, pepper, a little bit of paprika and any other seasonings you want (i like to keep this simple but you can try all kinds of stuff)

you take (bone-in) skinless chicken (white and dark) and salt and pepper it. in a seperate bowl, mix some egg whites and maybe 1 egg yolk.

dip chix in egg and then toss in crumbs.

line a baking sheet with aluminum foil and spray with nonstick cooking spray (important b/c it will stick!). line with single layer of chix and cook for about 40 min!

I love yukon Gold for mashed potatoes!!! They come out so creamy. Of course I leave the skins on and put in parmesan cheese, butter, cream, and garlic. For sweet potatoes I use lots of brown sugar, some cream, and butter. Everybody's ideas sound soooooo good. Believe it or not Jay is the one person in the universe who hates mashed potatoes. When he first told me, I just stared at him in amazement.

Okay the cheese and garlic and bacon and sour cream and scallions and all that is really the most decadent...mmmmm good!

 

If you want something a little more healthy (and different) try mashing them with butter, cream, fresh ground black pepper, and fresh ground nutmeg (fresh is important). My dad makes his like that and people always ask what is in them because they have a different - but delicious - flavor. Try them one day :)
