I will have to check it out Lauren. I do only use gluten free pasta at home but according to the doctor, ideally I shouldn't eat it regularly. Just occassionally.

 

I'm not really sure if it's that I hate to cook or I hate cooking the same thing over and over. I know how to cook I guess, but I'm not very creative in the kitchen. I'm not very good with coming up with new ways to switch up old favorites so I don't tire of them. DH on the other hand can eat the same meal every night! NO way in hell could I do that.

 

On a good night, we grill. Some type of meat with green beans. We eat that for a week or two and then I get bored. We just went to a BBQ in which they made some veggie kabobs and I seriously had a "why don't I do that moment?" Its like I think "this is what I'm suppose to eat when I'm good and I can't deviate." Now I need to find myself some alternatives so I do deviate, but in a good way!

rachel, i hate cooking too. i'm NOT creative in the kitchen and would happily make the same bad meals over and over. however...i'll go to a bbq or a shower or something, eat something really yummy, and be obsessed w/ making it myself (hence, quinoa)...if you grill, why not portobello mushrooms instead of meat? chicken instead of steak/red meat? we grill veggies (zucchini, mushrooms, asparagus, etc.) all summer long. i'd rather have that than pasta or rice.

alternatives to ice cream - make a smoothie and put in the freezer. put grapes in the freezer. simple changes make a big impact!

Rachel why not do easy crock pot dishes you just throw the food in the pot and your good to go. You can make a lot of healthy options. What I do because I tend to get into a routine and make the same things is get a good cook book or google and find some easy ideas. I agree just make a couple small changes and it will help.

LC, I was just reading you post on page 4.. since you mentioned that your doctor recommend a low glycemic index diet (I have diabetes II). I would recommend the south beach diet. This is what my doctor recommended for me. The basic principal is to eat foods that have low glycemic indeces (sp) foods that keep you feeling fuller longer (and prevention spikes in the blood sugar), such as whole grains, veggies, and lean protein. So far I have lost about 4lbs since I started June 23. I like the SBD because I dont have to buy special foods, you can eat regular foods.

 

Also, not sure who posted about the quinoa.. oohh it is so yummy. I have a savory one as well as a cereal kind for breakfast in the morning..I love it.
