My last morning in Baja we had a different type of chilaquiles.

The tortillas were pan fried with a little oil then they added eggs and made a scramble in same pan untill eggs are cooked - finally they added the sauce.

Placed very hot on a plate with cheese & the cream.. VERY, VERY YUMMY!!!

we should all make it tomorrow morning! i've had it with eggs too...so yummy...it isn't tomatillo season so i will have to get the canned ones...hmmmmm

Ok I'll make it too!! I just got some cans of the sauce. I was actually going to make them for dinner.

Another version: Pie AZTECA- Kind of lasagnia - sp?- but with tortillas.

 

Layer tortillas with green sauce, cheese, shreded chicken breast, corn chopped fresh onion, cilantro (or not- anny). Keep layering and top off with sauce & generous layer of cheese. Place in 360 degree oven until cooked and then place under broiler 3-5 minutes to brown cheese. VERY yummy! This version can be made with the red sauce too. Best with the Chile Pasilla sauce.

I know I am very very late on this thread but I love Chilaquiles so, here are some suggestions :

 

-When you are frying the tortillas put some sliced onions to give some flavor on the oil, but be careful on not burning it... it taste so good!

 

- You can add some chicken breast chopped after you finish with the tortillas, then you add the salsa and the chesse on the pan, top with the cream!.

 

- You can do your own easy salsa either green or red: put some tomates on the microwave and the pepper in a plastic bag for 4 minutes, then you blend it with cilantro, some salt and that's it!!! you have a very quick salsa...

 

- also you can put some fried beans in your plate and eat it together, the beans are the best companion to the chilaquiles!!

 

- if you want type of light chilaquiles, put the sliced tortillas on the oven or the microwave until get crunchy, and then you continue withe salsa with no oil, and you put some light chesse and non-fat cream...

 

jajaja you can tell how fan I am of this recipe.. jajajaja

thanks mora...i love my chilaquiles with refried beans on the side...sooo good...i will try to bake the tortillas next time since it may be easier..

 

also, i read if you want to make green sauce from scratch roast some tomatillas, anaheim peppers, garlic and onions in olive oil in the oven until soft then throw in the blender or food processor.
