you are so thoughtful...how nice of you to think of her and how funny, my nephew Jackson is due in October as well. I think that might be the name of the year!

I would definitely do a big thing of homemade meat sauce for pastas. Pesto sauce freezes well too (I make it all the time).

You could also do a potato/sausage/cheese/egg caserole/quiche for breakfast heat-ups. You cook it all the way through, let it cool, then cut it into slices before freezing so they can take out a few slices at a time instead of having to heat the whole thing up (depending on how big it is). Works for the lasagna and other casseroles too.

Dessert? Peach cobbler! Yum-o!

Cute! It's funny, for the longest time Brian and I were really into the name Jackson as well. I think if we didn't become so enamored with the name Aiden, we'd be naming this baby Jackson (I mean, if it's a boy that is!). I still really love that name though.

And ooooh, yes! I agree with Tami. Desserts are another awesome idea. Breafast foods are also another idea as Tami mentioned. I'm not really into breakfast foods, but I know my friend used freeze pancakes. Stir Fry can also be frozen and reheated.

How about a mock chowmein? I have a recipe if you want it. Also, it is apple seaon, how about apple cobbler? Super easy to make and freezes well. One other thing we like to frezze and bake is salisbury steak w/gravy. Again if you need any of these recipes let me know.
