Amy for the cocktail hour you can do the chamoy fountain is very refreshing with jicama, cucumber, mango and some other fruits and snacks diped on the chamoy salsa.. mmmm here is one page showing one so you can have a better idea of it...

Mixed Lettuce and Shrimp Salad, Mango-Ginger Dressing

Seafood casserole au gratin

 

Main Course:

Chicken Breast Stuffed with Goat Cheese and Sun-Dried Tomatoe, mashed potato, peper sauce

Sea Bass Fillet in a Puff Pastry Crown, white wine creamy sauce

 

Dessert

Blueberry Duet

Chocolate Duet with Vanilla sauce

just wanted to say that I loved the Salad and the Chicken.. but Jorge wants to have meat instead of fish... so we are working on that... oh and the dessert OMG was divine!!! we loved both, but since I am a chocoholic.. we will have the chocolate duet with vanilla sauce and berries... is GORGEOUS!!!
