Mexican Wedding Cookies

I haven't made these, but saw the recipe in this months edition of "All You". I thought they might be cute for favors since a lot of us are mexico brides!

 

1 stick unsalted butter, at room temp.

1/2 c. confectioners sugar

1 tsp. vanilla extract

1 cup all-purpose flour

1/8 tsp. salt

1/8 tsp. cinnamon

1 c. walnuts or pecans, lightly toasted and ground

 

1. Preheat oven to 350, line a baking sheet with parchment. Cream butter and 1/4 c. sugar until fluffy. Add vanilla, reduce speed and gradually add flour, salt, and cinnamon. Stir in nuts.

 

2. Roll dough into 1 inch balls and place 1 inch apart on a baking sheet. Bake for 12 minutes. Let cool on rack for 5 minutes.

 

3. Sift remaining sugar over warm cookies until well coated.

Yields 24 cookies

mmmm .... these are one of my favorite cookies and we are using them as favors --- actually as little farewell treats for guests that are departing.

 

thanks for the recipe! i'll have to try it at home, but i don't think i'm brave enough to try and make them for my favors ...

 

deena from sweet dreams in cabo is delivering my cookies on friday before the wedding so we can put them in bags for sunday ... if anyone wants the price quote, i can look it up ...
