Wedding ceremony in Mexico- official or symbolic???

My fiance and I are starting to work with our wedding planner and we are starting to discuss the actual ceremony. We can get officially married in Cancun, however there is a bunch of extra paperwork and blood tests that need to be done. The other option is to get officially married here in Canada before we go and then the ceremony and certificate in Mexico will be more symbolic. What is everyone else doing and what are the pros and cons to each?

I am doing civil here in the USA because we can just benefit with the details now as my ceremony isnt until July 2015. Thats my biggest reason but also due to the extra paperwork needed in Mexico
