Wedding in Cozumel Feb. 2014-Need information for wedding ceremony and reception (maybe a wedding coordinator)

Hi, We are getting married in Cozumel, February 2014, and currently have a wedding coordinator, BUT am finding that our price just keeps going up for the 16 of us.  We are currently paying $150 per person JUST for one meat, one side and 4 apps.  Almost $7,000 for 16 people for the beach ceremony and reception (with everything from plates, glasses, etc)...which is alot of money.  We are tossing the idea of getting married on the beach (maybe at our resort when we get there, get a minister), and then have a reception at a restaurant.  Or if anyone has a suggestion for a wedding coordinator, just to tie things up, that would be great also.  Any suggestions would greatly appreciated.

Staying Feb. 26-Mar. 5

Wedding Date:  Feb. 28.

(week of CARNAVAL also)
