Wedding packages with 50+ people... any suggestions for all inclusive resorts?

Hey ladies, I just got engaged last week and my fiancé and I have always talked about having a destination wedding... I know it is still really fresh, however, I want to start my research because I want at least a years notice for all of our friends and family.  We sat down and figured out we are going to easily have 50 people who will be able to join us on our special day.  I started checking out all of the hotels and a lot of them have small group packages... I have noticed that some of them say you can pay extra per person but I feel their details are confusing.  We know we want a private dinner as well as a reception where everyone can dance and have a good time.  If anyone has any advice or suggestions I would greatly appreciate it!!!
