How to accomodate guests with special diet - sharing dishes served at reception ?

Some of our guests have special diet - Vegie, Hindus - no beef, Muslim - no Pork; and we will have our wedding in Greek, and we chose a Greek Style Menu, no there are lots of meat section of Pork and Beef - not much chicken unfortunately, and except for the main dish, everything else are sharing. 

 

For vegan guests, I can organise vegeterian meals for them so no problem. 

 

For the main dish, guests can choose so that's not a problem.

 

However for the sharing dishes - I dont want to remove Pork or Beef , because we love our meat, and those dishes are very traditional Greek, and my FI would not be happy if we dont have them and have seafood or chicken. We also dont think put them in separate table will be possible.  Should I in the menu (I plan to have menu printed) put in what dishes are beef and pork, and they can self serve?
