Cost of filing wedding documents

Hi there! I am in the process of planning my wedding at the Azul Sensatori and am comparing different packages available to see what is the best deal. I was wondering how much it costs to do the filing of the wedding documents your self (translated, notarized, etc). Is it even worth doing this myself or is it gonna be a big pain in the butt? Should I just go with the package that does it all for you? I am trying to save as much money as I can, so if anyone has any tips or thinks some of the items in the packages aren't really worth it (like chilled champagne, its all inclusive so I don't really care about an extra bottle of champagne!) please let me know. Any insight is greatly appreciated!! Thanks
