I found the cab process fairly easy at the Cancun airport - when you exit customs there are a line of counters where you can arrange van transportation to the hotel zone (no advanced reservations necessary). I think it's $5 for a shared van (that goes to various hotels in the hotel zone) or you can get your own private van for about $40. You pay at the counters and then they give you a voucher and you take it outside with you.
