I can't believe it JUST found this forum and thread!!  I love my crockpot.  I work pretty long hours so I usually use it once or twice a week.  So nice to come home to a meal that's already prepared or just need a few 15 minute additions.  Thought I'd add a couple of my favourites to everyone's lists.

 

Crock-Pot Country style pork ribs

Ingredients:

1/4 cup soy sauce

1/4 cup orange marmalade

1 tablespoon ketchup

1 large garlic clove, crushed

2 pounds boneless country-style (or any style really) pork ribs

 

 

Instructions:

Combine all ingredients

Toss meat in sauce & place in crock pot

Pour remaining sauce over all.

Cover and cook on low for 8 hrs.

 

Crock Pot Beef Stroganoff

Ingredients:

3 lb. beef round steak, 1/2 inch thick
1/2 c. flour
2 tsp. salt
1/8 tsp. pepper
1/2 tsp. dry mustard
2 med. onions, thinly sliced and separated into rings
2 (4 oz. each) cans sliced mushrooms, drained or 1/2 lb. mushrooms, sliced
1 (10 1/2 oz.) can condensed beef broth
1/4 c. dry white wine (optional)
1 1/2 c. sour cream
1/4 c. flour

 

Instructions:

Trim all excess fat from steak and cut meat into 3 inch strips about 1/2 inch wide. Combine 1/2 cup flour, the salt, pepper and dry mustard; toss with steak strips to coat thoroughly. Place coated steak strips in crock pot; stir in onion rings and mushrooms. Add beef broth and wine; stir well. Cover and cook on low setting for 8-10 hours. Before serving, combine sour cream with 1/4 cup flour; stir into crock pot. Serve stroganoff over rice or noodles.

 

 

Crockpot Curry Chicken

Ingredients:

8 – 10 chicken breasts (or any cut up chicken pieces.  I prefer boneless skinless thighs as they stay more moist)

1 16 ounce jar salsa

1 chopped onion

2-3 tbsp curry powder

1 c sour cream (I use fat free)

*other chopped veg as desired.  (I usually add some extra bell peppers)

 

Instructions:

Place chicken in crockpot. Add salsa, onions (other veg) and curry powder. Cook for 6 hours on low in crockpot.  Stir in sour cream right before serving.  Serve with preferred starch (rice/beans etc.)

I bought a Crock Pot with the intention of becoming super domestic and using it all the time.  The first time I used it (last year) was a complete disaster... second try (last night!) was the charm. 

 

No prep required, and each serving is under 300 calories!

 

  • One whole turkey breast (Trader Joes sells these)
  • 1 jar or can of cranberry sauce
  • 1/2 cup orange juice
  • one packet dry onion soup mix (reduced sodium if possible)
  • 1/2 tsp black pepper

 

Put the entire turkey breast in the Crock Pot.

 

Mix together cranberry sauce, orange juice, soup mix, and pepper.  Pour the mixture over the top of the turkey.

 

Cook on low for 6-8 hours.

 

That's it!  It ends up smelling and tasting like Thanksgiving dinner.  I got it from the Fix It and Forget It Lightly Cookbook.
