What time is your wedding ceremony in May and how long is your reception? Is there anyway the reception can go past 11 PM?

My daughter is getting married on May 28, 2011 and she is undecided on the

tme of her ceremony.  Doesn't want it to be too hot for her groom (he doesn't do well in the heat) but also wants to have at least a one hour cocktail hour and then at least a 5 hour reception after the cocktail hour.  Were you able to extend your reception past 11 PM and if so, how did you do that?  Are they flexible at all with the ending time of the reception?
