Congrats and welcome to the forum Amber. There are tons of destinations where the weather is perfect in January (Mexico or the Caribbean). I'm sure you'll find something that suits you between the many beautiful resorts that each have to offer. In terms of the party ending at 10 or 11 most guests do that to ensure the quality of stay of their other guests staying at the resort as well but because the reception is over doesn't mean the party has to end you can always invite guests to continue partying off property at a local hot spot/restaurant/nightlcub. Welcome to the site.  As others have said, any of the caribbean islands will be in the mid 70s-80s in January and will be a perfect change in venue for most guests during the winter time.  I guess you just need to determine what is important for you (such as cost for you and your guests, how long it will take to travel to your destination, and just personal preferences of what you want in your wedding).  Good luck planning.
