Whoa Amy! that looks like a LOT of ingredients!!! but yum

 

I am making my pot roast in the crock pot!

 

1   5-6 Pot roast

4   Red potatoes

4   Carrots

2   Celery Stalk

2   Cans Cream of Mushroom

1   Package dry onion soup mix

1   Can chicken broth

 

Cut up carrots, celery and potatoes into chunks (the size of your choosing.. my husband likes big chunks, not little slices)

Put pot roast into crock pot

Place carrots and whatnot around the roast

Pour chicken broth, cream of mushroom and dry onion soup into a bowl and stir together

Pour over roast

Cook on low for 7 hours

 

I usually serve over rice with warm bread! YUM!

I generally go food shopping for the week on a Monday (with a top up shop over the weekend if we're at home) and on Sunday night I try to plan at least Mon-Wed's dinners. My mum got me a subscription to a food magazine for Xmas and one day when I was bored, I went through the whole of this year's mags and made a list of what recipes I wanted to try.

 

As we were at home this weekend for a change, I made a traditional British Sunday roast last night (chicken, stuffing, roast potatoes, cauliflower and cabbage). I have some cauliflower and potatoes left so I'm cooking a steak pie (pre-bought and in the freezer) with mashed potatoes and cauliflower cheese and gravy. Mmmmmmmmmmm!

Since it is the first Monday night of the NFL season - tonight will be buffalo wings (from the freezer) and fries.  I better enjoy eating like this while I can!  My wedding will be November 2011, so I have committed to making an effort to eat better once 2011 starts.  I know if I try to start behaving this early, that I will completely give up before the wedding.  You have to recognize your limitations and work around them :-)

Made some AWESOME homemade stroganoff the other day

 

1 pound hamburger

2 cans cream of mushroom

1 cup water

1 cup sour cream

 

Brown hamburger

Stir in soup, and water and bring to a simmer

Let simmer for 5 to 10 minutes

Stir in sour cream

 

Serve over rice or noodles

Here's what we had for dinner tonight.  It was super easy to make and pretty tasty! 

 

Beef Empanadas

Ingredients

  • 2 (10 ounce) cans refrigerated biscuit dough
  • 1/2 pound lean ground beef
  • 8 ounces tomato sauce
  • 4 teaspoons chopped chilies
  • 1 tablespoon garlic
  • 1 1/2 cups cheese
  • Salt and pepper to taste
  • 1 egg, lightly beaten
  • Sour cream (optional)
  • Mango-peach salsa (optional)
 

Directions

  1. Brown ground beef.
  2. Add tomato sauce, chilies, garlic, cheese, salt and pepper.
  3. Pat out each biscuit on cookie sheet and put about 2 tablespoons of beef mixture on each biscuit.
  4. Fold biscuits in half and seal the edges by crimping the dough by hand or with a fork.
  5. Brush top of empanadas with egg and bake for 15 minutes at 375 degrees F.
  6. Optional: Serve with sour cream or a mango-peach salsa on the side.
