I came across this personalized guest book...it's a little elaborate but would make for a cool keepsake/coffee table book.

Yep. It's like making a photo album book but I guess there is a template for pages that guests sign?

I was thinking bout making something similar using shutterfly.com. I made a photobook using that website & it would be easy to make one that was a guest book. I'm always getting offeres for free photobooks from them. I've posted two on this forum.
