Hi and congrats on your engagement! You might consider talking to travel agents. They can help you by running approximate flight costs from different cities, which might help you narrow down a country.

 

We chose Mexico because for us (guests mainly on East and West Coast), it was in the middle. Cancun/Riviera Maya worked well because there are so many direct flights, which also keeps costs down.

 

Other than that, thinking about the overall feel of the place you want (more exciting? more relaxed?) and possible activities (adventure? cultural?) can help you narrow it down.
