Sure!! Low fat Bran and Fruit muffins:

 

Bowl # 1

1.5 cups of wheat bran (or All Bran cereal - but it's processed)

1 cup skim milk and 1 tablespoon of vinegar (as opposed to buttermilk)

Mix well and let soak for 5-10 minutes

 

Bowl #2

1 Cup of whole wheat flour

1 teaspoon of baking soda

1/4 cup of brown sugar

 

Add two egg whites to bowl # 1 after the 10 minutes

Add fruit (cranberries, blueberries, or grated zucchini/carrots or anything)

Combine two bowls and mix well - add a little milk/water if it's too thick

Put into greased muffin tins and bake at 350 for 16-18 minutes!!
