Welcome to the forum. I am also Gluten Free/Celiac and when we were in Cancun recently, they were very accomdating on my special requests. It always helps to call or email ahead of time to the chef and give him the "heads-up" on your arrival date. I even had one resort get Vanilla Soy milk for me one time, it was fabulous!
