Congrats and good luck with your planning. I am a little biased with locations as I am getting married in the Mayan Riviera, and have been there several times. I found it affordable for us and oiur guests that will be travelling from all over the country.

 

I would suggest finding a TA that specializes in destination weddings. It will help you to narrow it down a bit- otherwise finding a resort can be very overwhelming! You'll find a tonne of info. on this from others who have been there and done that. I also found my photographer from this forum.
