I would say that now that you've picked out your location the next step would be getting in touch with a travel agent, if you plan on using one, and also emailing the resort to check on availability and wedding packages. You shouldn't have any problems getting a date and a time that you like since you've already gotten started with your planning- I wish I hadn't left my planning to the last minute !
