I am not doing too bad so far!! I have been eating good but I am not getting enough water and I havent been able to make it to the gym. FI and I just got a new puppy about 2 weeks ago, and now FI is gone to AHL hockey camp so I am taking care fo her on my own (shes a miniature pinscher, almost 12 weeks).

Jacilyn I can't wait for the recipes!!

 

Anyone know good ways (other than adding crystal light or lemon to it) to get in the right amount of water per day?

Ok so I'm sitting here trying to decide what to make tonight and looking at recipes so I thought I'd throw a few out for you! I bought this healthy cooking cookbook and picked out meals for dinner and put them on a calendar then we picked lunch and breakfast. We set a budget for cals and eat day made sure we didn't go over. So here are a few recipes

 

The first night I made this AMAZING steak we had it again 2 night later. SO delish!

Seared Beef Tenderloin Steaks w/ Dark Beer reduction and Blue Cheese

Prep: 2 min Cook: 13 minutes Calories: 209

 

2t steak rub (any steak seasoning)

4 (4oz) beef tenderloin steaks, trimmed (about 1 inch thick)

1t olive oil

1 (12oz) bottle dark lager

2T light brown sugar

2T crumbled blue cheese

 

1. Preheat oven to 450 degrees

2. Rub steak seasoning over both sides of steaks.

3. Heat olive oil in large nonstick skill over medium-high heat. Add steaks; cook 2 minutes on each side or until browned. Remove steaks from pan; place on a baking sheet. Bake at 450 for 4 to 5 minutes or until desired degree of doneness.

4. While steaks bake, combine beer and brown sugar in a medium bowl; add to skillet, scraping pan to loosen browned bits. Cook 6 minutes or until mixture is slightly syrupy and reduced to about 1/4 cup. Serve steaks w/ reduced sauce; sprinkle evenly w/ cheese. yields 4 servings

 

 

Asiago-Crusted Pork Chops

Prep: 5min Cook: 9 min Calories: 253

 

4(4oz) boneless center-cut loin pork chops

1 egg-white, lightly beaten

1/2 cup bread crumbs

1/4 cup (1oz) grated asiago cheese

1/4t salt

1/4t black pepper

1T EVOO

4 lemon wedges

2t chopped fresh thyme

 

1. Place pork between 2 sheets of plastic wrap; pound to an even thickness (about 1/4 inch) using a meat mallet.

2. Place egg white in a shallow dish. Combine breadcrumbs, cheese, salt, & pepper in a shallow dish. Dip pork in egg white; dredge in breadcrumb mix, pressing gently w/ fingers to coat.

3. Heat oil in a large nonstick skillet over medium heat. Add pork; cook 3-4 min on each side or until lightly browned. Squeeze 1 lemon wedge over each pork chop & sprinkle w/ thyme.

Makes 4 servings

 

Here are a couple sides we had

 

Roasted Green Beans w/ Onions

Prep 3 min, Cook 13 minutes Calories: 39

 

1 (12oz) package of fresh green beans

1 cup sliced onion

1t dark sesame oil

1/4t salt

 

1. Preheat oven to 500 degrees

2. Combine everything in a large bowl; toss to coat. Arrange mixture un a single layer on a jelly-roll pan. bake at 500 for 10 minutes; stir beans. Bake an additional 3 min or until beans are tender.

Makes 4 servings

 

Spicy-Sweet Broccoli

Prep: 3 min, Cook: 4minutes, Calories: 62

1 (12oz) packkage broccoli (We just cut up a couple bundles of broc)

2T low-sodium soy sauce

2T rice vinegar

1T dark sesame oil

2t sugar

1/4t crushed red pepper

 

1. Microwave broccoli according to package directions. (we steamed our fresh broc). Drain. Combine soy sauce & remaining ingredients in a small bowl. Drizzle over cooked broccoli

Makes 4 servings

 

I will give you some more at another time! If you're interested I bought the book at Barnes & Noble called Cooking Light Fresh Food Fast. It has 300 recipes of soups, salads, sandwiches, meatless main dishes, fish & shellfish, meat, and poultry. It all looks so good and its healthy. There are also some desserts listed throughout. But we've been picking a main and mixing and matching w/ different sides and I love it has calories listed cause its really helped Joe and I keep on track. The food is so good and I'm done w/ 30 minutes!

Ladies, I wanted to post our first daily challenge earlier today, but totally lost track of time. So, here's a WEEKEND CHALLENGE:

 

At some point this weekend do 50 crunches and 25 push-ups (yes the girly way counts lol)

 

I figured since its the weekend it'll be good to start with a work out challenge and start off slow. Let us all know how you do!

Of course! :)

So, yesterday I walked/ jogged for 45 minutes outside and then came in and did my 50 crunches and 25 push-ups. I have to admit, the push-ups were killer and I almost stopped after just 6. I'm weak. lol Its raining today, but if it stops I'd like to head out for a walk.
