I'm so happy to see two others on here suggesting The Wedding Holiday too! (We are also going through them...:) )

 

Seriously, contact them (even if you're not around the Oakville, ON area) and they'll be able to help you out tremendously! It's their job to find the best price at the best hotel, and they don't even charge anything for it! They're just THAT good.

On an aside note, $3000 per couple really doesn't sound that extravagant. That works out to $1500 each, which seems quite reasonable for a luxury resort. But look around if you don't like the price. You're bound to find something!
