Congrats and welcome ! playa del camren and the surrounding areas (like Akumal) have a lot of places where you can host a wedding, without people staying there so everybody can pick their resort or hotel depending on their taste/budget and you just have to organize transportation (or they can take cabs).

 

try and look up the site reviews / wedding reviews by MarieSam and SanFranSara (use the search tool), and the review of one of the members who got married at Xcaret EcoPark.

 

On the pacific side you can also try Las Caletas - people stay in Cabo where they want and the wedding is on the island.
