Mexico is a beautiful country and offers a lot of destination wedding options:

Los Cabos have amazing beaches and great resorts (check out the los cabos guide website ), Cancun TUlum Playa del Carmen are great places too, Puerto vallarta or the more quiet Sayulita are other superb locations.
