Just ignore it and send out the normal thank you card. Mark my words she'll be pissed off about something else soon enough, if she is that sensitive she'll think of something else to bloody whinge about it lol

What a stupid thing to get mad over. But i guess you should try to smooth it over with her because you want to have a good relationship with her. I wouldnt mention it in the card. Maybe next time you see her or talk to her on the phone bring it up how your fi said she was upset and it was an oversight on your part or say you thought your cuz did pass it around.
