Ceremony options?

We are getting married at the Occidental Xcaret in the Mayan Riviera and it will be a "civil" ceremony. We wanted to do something personal and were going to do the sand ceremony... but the WC said it is too windy by the ocean and that the judge may not want to do it. She said writing and reciting our own vows might be better or have members of our family or wedding party read some inspirational prose... The only thing that worries me about the vows is that both my FI and I have terrible memories and we would likely have to READ our vows! Any suggestions for "readings" our family can recite? Thanks for the help!

I would do the sand ceremony if you want to. I don't see how the wind can affect the sand ceremony, you're just pouring sand from on container to another, not holding it up in the air and dropping it. The wind is the reason most people do the sand ceremony instead of lighting unity candles.
