Want a Jewish Ceremony. Help!

I'm planning on getting married at the Barcelo Maya Palace in October 2009. My fiance and I are Jewish and would like to have a Jewish wedding. Our Rabbi is unavailabe to come to Mexico. I have been online searching for a Rabbi in Mexico who will marry us, but no luck. Anyone else in this same situation?

I wanted the same thing but in the end I decided to get married with a Rabbi at home and just do a civil ceremony there.
