Site Visit in February

We are definitely getting married in Cabo! Now I am just trying to decide between the Sheraton, Hilton or maybe Casa del Mar. We are planning a 5day trip in February (the only trip I can make) before an Oct 2009 wedding. After our venue, any suggestions on who are the most important vendors to meet with during that trip?
