Very confused on a few issues with ROR and booking wedding

I have not booked my date yet. It has not been released but I keep checking. We do have a certain date we want Dec 1 that will be our 5th anniversary of meeting in person. (meet online lol).

 

I work for CruiseShipCenters, we specialize in cruises but we also are a full service agency.

I am really new to the business so every day its a learning experience. I basically work from home and only work in the office on sundays.

 

My biggest fear is people waiting for the last minute and having the rooms or flight sold out, but I guess that will be their fault and not mine.
