I don't know the exact specifics of the menu, it took me a few weeks just to get the little info that I got. I don't know if it maters what package you have. I have the gold menu and the Ultimate wedding package. I was told I could have one set menu or create options for my guests but I would have to tell Dreams in advance who was having what. To keep things easy and not create individual meals for each guest, I am making the menu the same for each course except the main entree. My guests will have a choice of the chicken and steak duet or fish. I was told that if any of my guests have dietary needs Dreams would make an additional meal choice for them. I know I'll have a few of those but will handle that closer to the wedding. Keep the meal choice in mind when sending out your invitations, too. That was why I really wanted to know so I could include it on my response card if there was a meal option.

just think about the heat and the flowers - will they survive? you're obviously not going to costco or walmart the day of the wedding....

Whoa, no joking on quick responses from Esman! I emailed him at 9:15 last night and had a response back within 15 minutes. It was very reassuring

 I feel your pain. It takes me forever to get a response. I am about 15 weeks out now so you are closer than me. I e-mailed Esman two days ago with some questions, so now I am just patiently waiting..:-)

It's frustrating I know. Most of the problem is that the resort holds too many weddings per week so the coordinators are run off their feet. Last year they held 250 and this year they are pushing for 300...that's nuts. Good Luck and be persistent!

I was having problems too but Esman has been great. I sent an email on Saturday and got a response today. Our wedding is May 24th.. not sure if that makes a difference.
