I asked that same questions and we told the extra money pays for..

 

The staff (since they are only working your party)

Servers

Bartender

Decorating the area

Clean up of the area

 

 

My biggest issue with a few resorts I have looked at is when they say you have to pick a set menu and there is not substitutions. I don't mind a set menu but there needs to be choices.
