As for cake...we got the Tres Leches cake.  It wasn't listed as one of the options, but they had no problem giving it to us...and it was amazing!  They do adjust the size based on the number of guests you have, but I'm not sure how 'personalized' they will get without an up-charge.  All you can do is ask!

 

As for the 'private' events...You could definitely make a group reservation at a restaurant for your 'rehearsal', but know that there won't be a rehearsal, unless you conduct it yourself.  We called ours a "welcome party" on Thursday night and used our free cocktail party for that instead of after the wedding, so that we could enjoy it with our guests.  After the ceremony, our guests went back to freshen up and met at the lobby bar for drinks until it was time for dinner!

 

I didn't use the live-streaming..but the wifi isn't very strong at the resort IMO, so I'm not sure if it would fully work if you had someone do it for you?

Not at all!  I had my ceremony at the Chichen Gazebo -- it has open sides and a beautiful wooden bridge that leads up to it.  Our reception was at the Mundaca Steakhouse.  We only qualified for a free cocktail party, and I wasn't interested in paying extra for a private event -- we had a group of 18.  Mundaca and El Greco can both make your reception very close to private if you are going to restaurant direction.

Yes, you can bring your own decorations but they will charge you a set up fee.

They do not let you book excursions in advance.  

I'll send you my wedding website info later and it has all of the info on the golf on it.

If you look at some past post on this thread you can see a pic of my cake and the cake for 30 is more like cake for 70.  There was so much cake I had them serve it to the entire restaurant. Crashing at one of the bars is fine, but they don't serve food.  If you do have it at one of the bars, I would recommend the Martini Bar outside.  At least you'll have music.  We paid the extra $800 for a private function the night before the wedding and had a meet and greet cocktail party for 2 hours, private bar and too many eats. We held it at the Cove Terrace and we felt it was worth every penny!  We brought our own music.
