Welcome to the forum! I chose Cabo for the amazing weather and because I know my guests will love it there. I'm leaning towards the Imperial Suite at the Fiesta Americana because of the privacy, but I know that Dreams is a popular choice (and all of the pictures I've seen of Dreams weddings are beautiful!). It depends on what your budget is and what your priorities are...

We've chosen Playa del Carmen and a small resort that is 1/2 inclusive because it's close to the town and it's a small town.

 

Ask yourselves what kind of a feel you want to go for: big all-inclusive? remote location? convenience of a large town? Once you've figured out those things, it'll be easier to decide on a location and then a resort/hotel.
