I think having a few special drinks available or doing beer/wine with a signature drink would be okay. People do pay a lot of money to attend and celebrate with you. This would cut your costs but be enjoyable.

I agree- you can limit the choices, but I would suggest not limiting it to just beer and wine. There are lots of people who don't like either of those, and being that it's Mexico, I do think margaritas or something festive like that would be good.
