Taco Soup - 1 point/cup (CORE)

It is 1 point/cup (makes 15 cups) and is also core:

1 large onion chopped
a few garlic cloves

1 can fat free chicken broth (or Veg. broth))
1 can black beans undrained
1 can kidney beans undrained or great northern beans undrained
1 can fat free refried beans

1 can spicy seasoned tomatoes - like tomatoes with jalapenos
cooking spray
salt & pepper to taste (you may not need it)
2 stalks chopped celery

Saute the onion and crushed garlic until soft in a LARGE pot sprayed with cooking spray. Add the other ingredients to the pot and simmer for 30 - 45 minutes.

I LOVED it and it was so filling. I had 3 bowls (1 cup each) and for 3 points I was SO full. Fantastic!

Are you sure this is only one point? It is so good. I made it for the girls for the superbowl but all the guys were eating it over the other 'reg.' chili. I passed the recipe along to all my friends and family. I did add 1/2lb lean turkey and a little low fat cheese on top. It makes so much we froze some of it and it makes perfect quick lunch. Well I'm not 100% sure actually. My WW person passed it out and said it's one point but when I plugged it into the WW recipe builder it came up 2 points... ahhhh! I am so confused! Basically what I do now is added a lot of no-cal veggies (celery, green peppers, jalapeno peppers) so it makes more and I figure that now it's 1 point a cup since it makes more than 15 cups. Does that make sense.

And of course with added ground beef/turkey/soy (I recommend Yves for a veggie chili version!), cheese etc. it will be more.

I have been having this problem a lot recently. i wonder if the online points calculator counts things different than the WW leaders? Has anyone else had this problem?

I'm going to go update the taco soup recipe now in the WW calculator and see what I get...

OK so I recalculated it with the celerry, 1 green pepper, 2 jalapeno peppers (optional) added in and guessing that it makes a total of 18 servings and it IS 1 point!

 

 

Here's what I entered into the WW recipe builder to determine this:

 

 

 

 

Taco Soup

 

main meals

POINTS Value: 1

Servings: 18

 

Preparation Time: 20 min

Cooking Time: 30 min

Level of Difficulty: Easy

Course: main meals

 

Ingredients

 

* 16 oz Old El Paso Fat-Free Spicy Refried Beans

* 2 cup Del Monte Diced Tomatoes With Basil, Garlic And Oregano

* 1 cup celery

* 5 clove garlic clove(s), crushed or finely chopped

* 1 large onion(s), finely chopped

* 2 cup canned black beans, undrained

* 5 sprays cooking spray

* 2 cup Del Monte Whole Kernel Golden Corn

* 2 cup Eden Organic Diced Tomatoes

* 2 Tbsp McCormick Taco dry seasoning mix

* 16 oz canned kidney beans, undrained

* 1 medium green pepper(s), chopped

* 2 small jalapeno pepper(s)

 

Instructions:

 

Saute onion, garlic, chopped celery and chopped green and jalapeno peppers in cooking spray until soft. Add all other ingredients to pot and simmer 30 - 40 minutes.
