Pros: quiet, charming, good food, clean, large balcony, plunge pool
Cons: slow, expensive, lack of good shopping nearby

After spending a week with friends and family we ended with our amazing wedding at a private villa in Akumal Playa. We had 102 guests attend our event and were looking forward to 4 nights of seclusion at this all inclusive resort. We chose to go AI - they offer both options there. Since it was the first week in June and slow season we were able to get the largest suite with the huge balcony and plunge pool for about $550/night AI. I still think this is expensive, but it was our honeymoon! We were so excited when we arrived as the resort is charming and clean. Our room was fabulous with a great tub overlooking the veranda, lots of light, great linens, custom pillow choices, ipod dock station, fruit basket, etc.  There is no elevator so I don't recommend it to older people or those in poor shape.  We had some nice meals, but we definitely found the main restaurant to be much better than the one close to the ocean. We also thought the staff was helpful and friendly. Our biggest issue was the fact that the swim up pool bar was closed 2 out of the 3 days we were there. This was a huge negative since we NEVER stay at all inclusive resorts but really were looking forward to just relaxing after a very busy 8 days in Akumal.  We met a few nice couples and overall it was a nice stay. The beach was nothing special to me. Not very interesting visually at all - just straight beach with a dock. The town is small with really only one good store for shopping. We didn't try any restaurants, but there seemed to be a good amount. We took the bikes into town 2 or 3 times just to get out and about. 

My friend was married here and very happy with the way it turned out. I think the grounds and the size of the resort lend itself nicely to a wedding. I would recommend this  - but I would definitely negotiate a deal for the cost per room for the guests... I would not want them to pay more than $300-$400 per room for All inclusive.
