Just wondering if anyone has suggestions for an off resort venue in puerto Vallarta?

Hello my name is Julianne and I have my wedding booked at the RIU Vallarta in Nuevo Vallarta for January 2016.

I am just wondering if everyone who had been to destination weddings or have been married at resorts have had issues with their resort. We were originally booked on the 6th for a symbolic ceremony then recently got told from our parents they would like the legal ceremony down there. So we are running into the issue with us arriving on Sunday and this not counting as a business day that we have to wait till Thursday the 7th instead of the 6th now the only issue with this is the only time available on the 7th now is noon. I feel this is too early for us to get married. I am curious as to if anyone has gone somewhere privately off of the resort to get married or if this is even a thing as I would like a later time.
