It is usually the most expensive item of the reception: Dinner and Drinks! So what can you do to budget and organize well? Of course it all depends on your available money for the wedding total but for argument sake let's take a budget of about 100 dollars per person which is about average for all night bar and food service. First let's start with the bar. I personally do not recommend the 4 to 5 hour bar to anyone in Mexico It is a party and no cash should be needed at any time. Also, in our venue we do not close early so it is an all-inclusive all night concept. So just consider the bar to be open during the entire party. The costs are going to be based on if you want well brands or top shelf brands and also I often set up a Specialty Sctrach Bar with all fresh ingredients for Mojitos and Margaritas So as you can guess, the cheapest is an open bar with well brands and beer and then it goes up according to the brands used and if we set up a cool looking bar and lounge area. Second, the food, yummy , the food can cost about 40 dollars per person for a good quality 3 course dinner, up to 150 dollars per person for 8 hors d'ouevres and 4 course gourmet dinner with imported ingredients such as Foie Gras and such... The dinner/food service cost is really very variable since we in www.Martoca.com for example, create all our menus for each wedding according to the taste and budget of the couple. In order to plan your budget I suggest you take in consideration the duration of your party and if it is more than 5 Hours you should have a late night taco bar for example . You should not have your guests without eating for longer than 3 or 4 hours. I try to have something, even small hors d'ouvres for example every 3 or 4 hours... This is a cool tip: If you are a mixed culture couple like for example Mexican Bride and American or Canadian Groom, it is fun to do for example hors d'ouevres from Mexico and Dinner from the Cajun/Southern Sould Food/France/italy/Irish or whatever the couples better half is originally from or his ancestry, and then close with amazing cultural desserts from Puerto Vallarta region in our case or wherever your wedding location is going to be. So Bride or groom gets hor's d Ouevres then the other gets the dinner choices and the dessert is local And if the budget permits and your party is longer than 5 or 6 hours like in our venue we do up to 10 hours... you should invest in a Taco Bar. It is a great feature for your wedding and it is only about 10 to 15 dollars per person to set it up with awesome fresh made salsas and tacos. So to summerize you need to consider the bar, types of brands and duration of open bar and if you want a specialty drink bar set up like this one for example: Then comes the food budget, in summary you need to consider qulity of food for example the steak can be Kobe, Prime, Choice... do you want Organic or Grassfed beef, or Lobster and Jumbo Shrimp versus Chicken or pork. All this matters. This is why I always interview my couples and find out if they enjoy fine dinning or are "foodies" and if not then I go with a more standard menu. If they enjoy food and want the dinner to be a showpiece in the wedding then we will offer exotic menus and combinations and create amazing culinary experiences for our brides and their guests. Once you decide on the quality and type of ingredients the cooking cost the same if we are making chicken or Lobster Does this make sense? It is about ingredients and then we cook what you like to serve your guests. Then you must consider after quality of ingredients is the Quantity of "servings" i.e. Fists Hors d'Ouevres, then dinner, then dessert bar, then taco bar and Mexican Coffee flambee for example Here are some pictures of levels and types of food services offered. I forgot about buffets... sorry. We do not usually do buffets because the quality of the food suffers on the line. In Mexico labor is cheap so it really is no difference in price so buffets are not recommended by me. You should treat your guests to great 5 star service An important part of catering is the dinnerware and silverware and glasses used, as well as the table settings... this can vary from about 10 dollars per person up to 30 or 40 per person or more. Once you have a budget for your wedding *STEP ONE! then you proceed to find a great deal and a venue for your wedding in Puerto Vallarta or anywhere you like. I promise you this works anywhere. At least if you are dealing with the Owner of the company/venue such as with www.martoca.com YOU set your price. I always tell my brides to tell me what they want to spend. I am a venue/wedding planner but our priority is to rent the venue. It is m famlly's business so when you rent the venue it helps us and in reality that is our priority so commissions and such are not our concern. We will accommodate our services to your budget. If you say your budget is 20,000 dollars well then guess what? You will have a 20,000 dollar package offered to you. On the other hand, if you say you want to maximum spend 10,000 then guess what? Yes, that's right, your package will cost 10,000 dollars! MAGIC!! Of course their is a minimum price where the venue just cannot make money on the deal so maybe they have to pass but it would have to be a very small budget. It is not that Venues or planners will charge you 20,000 for the same they could sell for 10,000 dollars mind you, that would be inmoral and unethical and downright bad business; But if you say 20,000 then they will put a package together worth 20,000 and show you decorations, flower arrangements, Fire Dancers, Crystal top tables, 7 course dinners and so on. It is up to YOU to be clear on what you want to spend. It is logical if you think about it. If you have 30,000 to spend you would not want a 10,000 dollar wedding because it most likely will be lacking services and quality of your taste. So in reality it should all work out if your planner listens to you and works with your budget. BUt my TIP is that YOU set the tone and the base price. I promise you it will not only save you money if you offer a lower budget (I suggest about 20% than what you have in reality in total) to begin with, it will also save you time and haggling because you will be starting at a lower rice than YOUR bottom line! So anything you add to the package will essentially be "gravy" or money for extras! OK, I hope this helps to save you money and time and by the way it helps us planners/wedding venue owners as well because we know that a happy customer who is expeditiously served and a client who obtained exactly what they wanted, or even a better offer than they thought, will recommend us; And this is what owners want: long term business and word of mouth referrals. This was a response for a bride who was debating whether a legal ceremony was needed or not; many liked this response so I thought I should share! Happy planning! As my friends here have said... they have no idea what they are talking about. Whomever posted that is in on it with the judge in Dominican or something hahahaahha Listen, first of all, people are joining you to celebrate with you because they love you and want to see you the happiest you have ever been; they want to be a witness to your best moment ever and that will be when you kiss eachother for the first time after you exchange your vows and exchange rings for the first time and not signing some documents. If it makes them feel better, for those few, bring a certificate from home to the beach and/or a copy of your legal papers and sign the contract right there on the beach. It really is not a big deal so ignore them. A judge in Mexico costs about 400 dollars to go marry you on the beach! And then, it is legal in the US and Canada but still you will have to go to the courthouse and get it validated anyway in the US and trust me, as a Mexican/American citizen I can tell you that having two legal "lives" in two different countries causes nothing but trouble. Sometimes I wish I was just either American OR Mexican citizen; so I can relax and not worry about the IRS and Hacienda (the Mexican IRS) at the same time! Papers, papers, and more beurocracy! Get married legally by mail. I am sure it is possible now My point is that the legal part is the least important, it is your union which matters. So do yourself a favor keep it simple and sweet, get a blessing form a preacher/priest and if I were you, I would make some legal looking contract but in a spoof kind of way Make it look official but a bit oversized so people can see it well and let it read something like this... Groom contract: I hereby donate all my bathroom space to Mrs. Keeley I hereby relinquish my Saturday's to Farmer's Market shopping Bride Contract: I hereby authorize Mr. Keeley to Wear New Balance Sneakers with Khakis I hereby relinquish my right to the TV on Sundays between 12PM and 10PM Something like that would by my style... The legal stuff is not fun or sexy and whomever thinks so is warped Good luck, have FUN with it. It is YOUR time, your day and your Marriage.
