We knew from previous trips that the deserts are just different tasting in other countries. The chocolate is different, the vanilla is different, etc. so just be prepared for it to be good, but probably taste different than what you might expect. For example, the "cheese cake" that we had for the rehearsal was more like a super moist vanilla cake, not like cheesecake from the Cheesecake factory. We also decided to go with traditional wedding cake to Mexico (tres leches) because we knew they would do a good job on it. As for humidity, they didn't even bring our cake out until we were done with dinner. Check with your wedding coordinator with what they recommend. And have fun picking your cake
