  10. Our standby recipe for gatherings is bruschetta. We've experimented with it quite a bit so I had to share our favorite recipe with you girls. It's from cooking light (called bruschetta pomodoro): Ingredients * 2 cups minced plum tomato (about 3/4 pound) * 1 1/2 teaspoons capers * 2 tablespoons chopped kalamata olives * 1 tablespoon chopped red onion * 1 tablespoon chopped fresh basil * 1 tablespoon extra-virgin olive oil * 1/4 teaspoon salt * 1/4 teaspoon balsamic vinegar * 1/8 teaspoon pepper * 10 (1/2-inch-thick) slices diagonally cut French bread baguette, toasted Preparation Combine all the ingredients except French bread; cover and let stand 30 minutes. Drain the tomato mixture. Top each bread slice with 1 tablespoon of tomato mixture. * We also rub garlic cloves over the bread after toasting to give it an extra kick of flavor. The basil and tomatoes come from our garden so it's super fresh and yummy!

  15. Glad you decided to go through with it. We are actually planning our entire wedding before we tell anyone, to avoid this exact problem. FH and I know what we want, and although it may seem selfish I really don't want anyone's opinion weighing down our decisions. We're doing our site visit in October - telling everyone it's just a vacation in cabo and then having a big party when we get back to announce it all. That way everything is booked just as WE want it to be. If anyone is against that, they just won't be joining us in cabo...I think what is most important is that you have the wedding of YOUR dreams!

  17. I've been to Greece a few times and I have to disagree with it being similar to home (well, maybe if Ireland is your home). While it may be similar to other locations in Europe it really is nothing like the States. With that in mind, although there is lots to see in Athens, I would definitely try and get off the beaten path and only stay in Athens for a day or two. Athens is VERY crowded and actually a little dirty to be honest, but it's worth seeing the sights. Once outside of Athens, the countryside and beaches are gorgeous!!!! I also recommend the Isle of Capri in Italy. The last time I was in Greece we first flew into Rome and spend a few days in capri and ferried over to Greece. I've never been to Bali, but Capri is the most beautiful place I've ever been. I think it depends what you're looking for though - a tropical island getaway (Bali) or some European culture and tourism (Greece).
  18. My only concern would be the heat - but if he's ok with the chance that he'll be a little warmer then I say go for it!
