Hi xxxx,
Thank you for taking the time out of your busy schedule to talk to me about the Project Management position with xxxxxx. ( I might get rid if this next sentence cause you already thanked them for time in the opening sentence) I appreciate your time and consideration in interviewing me for this position.
After speaking with you, (----get rid of that) I believe that I would be a perfect candidate for this position, offering the quick learning and adaptability that is needed for a diversified position. In addition to my enthusiasm for performing well, I would bring the technical and analytical skills necessary to get the job done.
I am very interested in working for ( I would say the company name. Ex: I am interested in becoming a part of AT&T's growing team and look forward to hearing from you...etc) you and look forward to hearing from you once the final decisions are made regarding this position.
(I would change this to .. I can be reached at xxx-xx-xxx if further information is needed.) Feel free to contact me at anytime if further information is needed. My cell phone number is (xxx) xxx-xxxx
Thank you again for your time and consideration. ( I would cut this out and just do your closing)
Sincerely,
xxxxxx

Jenn I hope I didn't change too much. I thought this might help it sound more assertive and professional. It took away a little of the "hire me please! and may help it feel more like "i'm the right person for your team." I think it's a good thank you note but I also agree that you should add something personalized from your conversation so that the interviewer might also recall something specific about you. If you want a opinion on 2nd draft -post! I hope it helps... and good luck I hope you get the job!
