i agree about drinking off the cold! or um, tea or coffee would do it too, lol i wouldn't wear jeans but a cute dress or nice pants and top should be fine. i think winter is the perfect time to do a tropical theme ... it will get everyone all in the mood and excited for your wedding! -

sorry i don't know that resort's policy, but remember, there's usually a way to get around crappy exclusive photog policies, like if your photographer is a guest of your wedding. welcome and good luck!
