  4. The resort had the menus printed out for us. They had the bride and groom's names on them and the menu choices they had picked out. They were done on white paper, printed in black. I thought about printing them myself on colored paper and fancy print, but ran out of time, so this worked fine using these. The demonstrations were for everyone in the restaurant on how to make a featured food. I wasn't real thilled as it was distracting and didnt have anything to do with the wedding. One of the brides on BDW had 29 guests and had no problem. Just be sure to allow plenty of time for dinner if you're having an event afterwards. We had dinner scheduled from 6:30 to 8:30 for 19 guests - perfect amount of time - and then went to the Health Bar for the dessert reception at 8:30. Our daughter and her husband ate at Cocotal the last night and did not care for the food at all. They were very glad they had chosen Fuentes for their free dinner. The breakfasts at Cocotal are great, though. Here are the starters at Fuentes: Merida-style duck confit salbue with pickled red onion, & sundried tomato, avacado cream Vegetarian grilled "faro" of nopal, eggplant, zucchini and sweet bell peppers, cilantro pistou Ginger & citrus-cured salmon ceviche with caramelize mango and tortila crisp Seared scallops & jicama slaw with grilled cacts leaves, chipotle lime aioli Crispy rice paper shrimp duet roll, chile d'arbol sweet glaze Mixed greens with crunchy jicama sticks and orange segments, Veracruz vanilla bean vinaigrette Endive, arugula & radicchio with ashe goat cheese, sweet and spicy pecans, hibiscus flower emulsion Caesar salad with sun-dried tomatoes, prmesan flakes and pistachio grissini Soups: Shrimp, clam & corn chowder with cilantro essence Yucatan "sopa de Lima" with panela cheese brochette Red fruits cold gazpacho with cardamom cream Rather than have 1 starter and 1 soup, my daughter chose the salmon ceviche (excellent) and the caesar salad (so-so).
  5. Anytime you email her, she gets back to you so quickly. My daughter was so happy she chose Vanessa. She worked so hard, we finally had to tell her to sit and relax at the reception. We'll be sure and post pictures as soon as we get them.
  6. We just got back from my daughter's wedding at EDR and Vanessa did the photos. She was so wonderful to work with and was willing to fulfill any specific requests we had for photos. By the end of the evening, she was like family!

Here is the dessert menu for Fuentes: Caribbean ice-cream trio with amaranth bar Fuentes “tres leches†with strawberries Cookies & crème brùlée “Nouvelle†Mexican chocolate, kalhua and coffee delight Bananas “Foster†sautéed with an “Añejo†rum sauce We had the tres leches and everyone seemed to like it. One thing about Fuentes, halfway through our dinner, they started doing food "demonstrations". It was shown on the overhead screens and announced my microphone. It was a bit loud and distracting. We were able to sit at two tables for the 19 of us. One of the girls has celiac disease and required a special menu. The chef came out and talked to her personally to make sure she was accommodated and happy with her food.

Here are the main courses for Fuentes: Please select two ( one to be served, Your Guest will have 2 options ) Grilled tuna wedges with Yucatan honey-scented black bean and corn relish, avocado sauce Seared Mahi Mahi fillet with stir-fried vegetables and cashew nuts, sesame ginger soy emulsion Penne Pasta with sautéed shrimp and parmesan cheese, ajillo cream sauce Pasta Primavera, mixed vegetables sautéed with garlic, white wine and olive oil Grilled beef arrachera “Wellington” with foie gras-stuffed mushrooms caps, Baja California Cabernet reduction “Poc Chuc” lamb chops and sweet potato brulée, Xtabentun liquor gelatin Achiote-marinated turkey breast roulade with Spanish-cured serrano ham & sundried tomatoes, grilled tomato cream Grilled pork chop and pineapple with sautéed bitter greens, tamarind mole sauce My daughter had the penne pasta (everyone loved) and the achiote-marinated turkey breast (dry and not so great).
  9. We learned from our recently completed trip, you can't have too much imodium! I took 6 pills in just a couple of hours; it was like eating candy - no effect whatsoever. People in our group used lots of imodium and quite a bit of the pepto bismol tablets, also. One girl went through 3 of the bandaid packs (luckily I had brought along extras!).

I'll let you know how everything tasted when we return. We are having the private dessert buffet and dance after dinner, so didn't worry too much about the dessert.

  18. We've been to St. Croix twice, but both times stayed at the Sugar Beach condos close to Christiansted. The last time we were there, the cruise ships no longer went to Fredericksted because of some crime issues they were having. I've heard the Buccaneer Hotel is a very nice, upscale resort. Good luck with the plans!

  21. My husband still talks about how beautiful my dress was, and I really didn't like it at all, and didn't care for how it looked in the pictures. Trust me, your FI won't be looking at the dress as much as he will be focusing on YOU, and to him you will be the most beautiful woman he's ever seen.
