My favorite thing to make and eat at home is "white chicken chili". YUM, it's delish! Here's the recipe, it seems like alot, but it really is pretty easy, oh and it's great to make a whole bunch, cuz it's better the next day. I might have to make some myself now that I am thinking about it....
WHITE CHICKEN CHILI
Prep: 20 min; Cook: 1 hr 10 min
Makes 6 servings, about 1 ½ cup each
¼ cup margarine or butter
1 large onion, chopped (1 cup)
1 clove garlic, finely chopped
4 cups ½ cubes cooked chicken or turkey
3 cups chicken broth
2 tablespoons chopped fresh cilantro
1 tablespoon dried basil leaves
2 teaspoons ground red chilies or chili powder
¼ teaspoon ground cloves
2 cans (15 to 16 ounces each) great northern beans, undrained
1 medium tomato, chopped (3/4 cup)
Blue or yellow corn tortilla chips
1.Melt margarine in Dutch oven over medium heat. Cook onion and garlic in margarine, stirring occasionally, until onion is tender.
2.Stir in remaining ingredients except tomato and tortilla chips. Heat to boiling; reduce heat to low. Cover and simmer 1 hour, stirring occasionally.
3.Serve with tomato and tortilla chips.
1 serving: Calories 500 (calories from fat 160g); fat 18g (saturated 4g); cholesterol 80 g; sodium 1020 mg; carbohydrate 49g (Dietary fiber 9g); protein 45
NOTE: I go heavy on the cilantro (an entire bunch), beans (2 large cans and usually 1 small) and chicken (I usually bake the chicken with salt and pepper, shred it after cooking and then put in the chili – I hate touching raw chicken); skipped the tomato. I also don't use a dutch oven, but just melt the butter and brown the onions in the bottom of my large soup pot.
