  3. Sorry its taken me so long to respond... my grandmother is in the hospital so I have been out of town for several days. Our other resort choices were Iberostar (which I wasnt thrilled with), EDR (which was a little over our budget), and Dreams Tulum (Not the kind of resort my FI wanted). My FI wants a resort that has buildings with a max of 10 rooms in each. My TA said he was going to contact Lomas Travel's wedding department and see if there are any available sites for those dates. I also asked him about Xcaret Ecological park and he is going to contact them also for availablility but Im not sure where else to look if these options do not work out. Im hoping to hear back from him today.
  4. Well we are kind of limited on dates because of FI's job (has to be on a Friday or Saturday) and the holidays that fall in November (Day of the Dead and Thanksgiving). Basically we have 4 dates to choose from November 9,10,16,or 17th... so of course with the days being Friday and Saturday they are booked. From what my TA said they only have 1 wedding coordinator for the resorts and all 4 resorts share wedding locations.
  5. Ok after months of looking and negotiating with my FI, we finally agreed on a resort, Palladium White Sands. Our travel agent called there yesterday and found out they are booked for all the dates in Nov we had chosen. So now I am trying to find a location outside the resort that is economical. I know in other threads someone recommended Al Celio but this is out of our price range ($ 6,599.00). Does anyone have any other suggestions?
  6. Here is what I found out... In the event that I can not find someone in Mexico to freeze dry the flowers I can import them next day air to the US. However, it is a possible PITA if anything goes wrong.   9. Does anyone know of a place in the cancun area where you can get your wedding bouquet freeze dried? I found some places in Cali and Texas that I can next day air them to but I would like to have them done in Mexico to avoid the customs issues.

  12. I have been looking at the IB also. For some unknown reason my FI is set on getting married there. I found some wedding info on several of the IB resorts at Iberostar Hotels and Resorts Message Board - Index. I have emailed the wedding coordinators at the Grand Hotel, Maya/Lindo and Beach. So far I have only gotten responses back from the Grand Hotel (they dont have wedding packages set up yet but will me when they do (doesnt help!!)) and, Irma the coordinator at the Lindo/Maya has been very quick and responsive so far. BIRTH CERTIFICATES translated into Spanish by an official translator attached with an “Apostilleâ€.   17. Jilly, I am assuming that you can have just a religious ceremony because in the the option section it lists: Religious ceremony (Non-denominational) $280.00 in addition to the pkg. cost
  18. I guess we are going to get legally married afterward because I think we have decided on the Aventura Spa Palace and in there FAQ section it says: Q. Can I get married in my country and still receive the Free Wedding Package? A. No. The Free Wedding Package can only be obtained if both bride and groom are getting married for the first time. (If you are already civilly married, please ask about our vow renewal packages).
  19. I tried this the other night and it was pretty good. Fettuccine with Creamy Red Pepper-Feta Sauce 2 tablespoons olive oil 1 small onion, chopped 2 to 3 garlic cloves, peeled and chopped 1 (16-ounce) jar roasted red peppers, drained and chopped 1/2 cup low-sodium chicken stock or vegetable stock 1 cup crumbled feta cheese or a 6-ounce block 1 pound whole-wheat fettuccine Salt and freshly ground black pepper 2 tablespoons chopped fresh parsley leaves Heat the oil in a heavy skillet over medium-high heat. Saute onion and garlic until soft, about 10 minutes. Add roasted peppers and saute until heated through. Remove from heat and let cool slightly. Place mixture in the bowl of a food processor with stock and all but 2 tablespoons of the feta. Process until combined and smooth, about 30 seconds. Cook pasta according to package directions. Drain, reserving 1/2 cup pasta water. Toss pasta with sauce, adding pasta water by the tablespoon, if needed. Sauce should cling nicely to pasta. Season with salt and pepper, to taste. Divide among pasta bowls. Sprinkle with parsley and remaining feta cheese.   20. I'm doing the "the best life" program by Bob Green and so far I have lost 4 lbs in 2 weeks. (You are not supposed to weigh in until the end of 4 weeks but I cheated.) I'm hoping to lose 30+ before November. Please pray for me! I hate trying to lose weight
