Anything with cheese comforts me! I love making grilled cheese on sourdough bread....sooooo good. But you can't hold back - butter in the skillet and on both pieces of bread, cheese in the middle, and fry it until it's crispy and the cheese is all gooey. If I'm feeling frisky I'll add sliced tomatoes but usually I'm good with just the cheese...haha
This is also a big comfort food of mine because it reminds me of my family. It takes no time to make so you can spend more time having wine with your blues while the comfort food cooks
Aglio-Oglio
1 pound linguine (can substitute spaghetti, spagettini, fettucine, etc.)
e.v.o.o.
red pepper flakes (like 1/2 tsp. or more if you like it hot)
5-10 garlic cloves, sliced (10+ in my house)
Italian parsley
fresh grated parmesan or romano cheese
1.) Fill pot with water, a few dashes of salt, and a teaspoon or so of e.v.o.o. and bring to boil. Add pasta.
2.) While pasta cooks according to directions on the box, cover the bottom of a large pan with e.v.o.o. (a few turns of the pan) and add the garlic and red pepper over medium heat so the garlic softens but doesn't burn. If it starts cooking too fast, turn the heat down and let it hang out.
3.) Drain pasta and reserve about 1 cup of the pasta water.
4.) *do not rinse pasta* place it in the pan with the oil and toss it all together, adding the pasta water a little at a time for flavor and moisture
5.) Garnish with parsley and cheese
My hubby is a carnivore but devours this meat-free dish every time )
